Wild Garlic Pesto

It is Spring time and around us nature is providing one of my fave foraging ingredients Wild Garlic. Young plants are now shooting up in many of the UK's woodlands, just follow your nose! Wild Garlic has a very strong scent!

To make a simple Wild Garlic Pesto which is super versatile you will need;

Ingredients:

30g wild garlic (or I just use my hands as a guide - 2-3 handfuls)
100g nuts, such as pine, almonds, hazelnuts (lightly toasted)
3 tablespoons extra virgin olive oil
50g hard cheese, such as Parmesan, pecorino, Cheddar (optional, remove if vegan or switch for cashew nuts)
½ a lemon (or more to taste)
Salt and Pepper to season.

Add to a blender and blitz and viola! Super simple a versatile yummy wild garlic pesto in seconds. This will keep in the fridge for a week or two.

Making your own garlic pesto is super simple, just add all the ingredients to a blender or pestle and mortar and whiz or bash until you have a smooth consistency!

This pesto works well as a base for pasta sauces, to marinade meat or poultry or even adding to cooking in place of traditional garlic. You can also make it into garlic butter or add to olive oil and apple cider vinegar and honey for a garlic salad dressing.
